1 lb. Imitation crab meat OR 1 1/2 lb. 100% white crab meat
1/3 cup onion, finely chopped
2/3 cup celery, finely chopped
4 tbsp margarine/ butter
1/2 teaspoon yellow  mustard
4 tbsp butter or margarine
3/4 cup grated cheddar cheese plus 1/4 cup for topping
1 small pinch ground nutmeg (optional)
1/8 cup bread crumbs
2 heaping tbsp all-purpose flour
1/2 tsp white pepper
1/2 tsp black pepper
1/2 tsp cayenne pepper
1/2 tsp paprika
1 cup milk
1 egg, well beaten
Squeeze fresh lemon/lime juice


In a heavy-bottom saucepan, over moderate heat, melt butter. Add onions and celery and sauté occasionally until onions are soft and transparent but not brown. Preheat the oven to 350°F. Butter a baking dish and set aside. Stir in the flour gradually and blend well. Add milk and stir constantly until smooth. Make sure the flour does not get brown. Add black and white pepper, nutmeg, mustard, and cheese. Take pot away from heat. Take a bit of the cooked mixture and add to already beaten egg to temper it. Beat until incorporated and add lemon/lime juice. Add the beaten egg mixture to the rest and stir. Then add crab meat and mix well. Pour in the mixture into the butter baking dish. Combine cheese, paprika and bread crumbs. Sprinkle over top of mixture. Bake 20-25 minutes or until top is brown and crusty. Serve with a salad, French baguette or crackers.
