Sometimes on a weekend you feel to eat fast food to treat yourself for the past week. I totally know the feeling! That is how hubby and I felt last night! In an attempt to eat healthier, staying away from too much greasy foods with preservatives, I decided to make a vegetarian pizza with a cornflour crust! As I looked in my pantry that is the first thing my eyes fell on. I must say that the sweetness of the corn flour made this dough mixture smell fantastic as my husband asked me if there was cheese in it. The sauce was inspired by my mother in law as she spices up her pizza sauces with hot sauce. I tried it the first time and it was love at first bite! After that, I added hot sauce into my pizza sauce recipe and never did it differently after that. As for the choice of vegetables, I think each one balances the flavor of the other really, really well, but you can use your favorite vegetables and it will still taste great! Buon appetito!
Garden Pizza With Cornflour Pizza Crust
Cook time: 15 minutes
Yields: One 16″ pizza
Cornflour Pizza dough
2 1/2 cups all-purpose flour
1 cup yellow corn flour (Promasa)
2 tsp instant yeast
1 tsp salt
4tbsp cold margarine cubed
4 tbsp cold shortening cubed
1 1/4 cups iced cold water
3/4 cup Traditional Pasta sauce
1/4 cup ketchup
3 tsp hot/ pepper sauce
2 cups cheddar cheese
1 tbsp pizza seasoning/ oregano
5 small- medium tomatoes
2 cups pineapple
1 cup bell peppers
3/4 large white onion
Mix all the dry ingredients together a large mixing bowl together with the margarine and shortening. Using your hands or a pastry cutter, incorporate the shortening and margarine into the flour mixture until it resembles bread crumbs. Add the iced cold water a little at a time until all the flour mixture is kneaded in well forming a ball. Flatten the dough into a disc shape so that it is easy to roll out when frozen and wrap in cling wrap, storing in the freezer for half hour or until ready to use.
While dough is in the freezer, chop all vegetables, slicing the onion and tomatoes into rings, cubing the pineapple, cutting the bell peppers into thin lengths. Grate the cheese finely. Mix the pasta sauce, ketchup, hot sauce, and pizza seasoning together in a small bowl.
Preheat the oven to 350°F. Roll out the dough to 16″ wide and put into a pizza pan. Trim edges if necessary. Begin to smother the pizza crust with the pasta sauce mixture, then dress with 1 1/2 cups cheddar cheese, distribute vegetables evenly on top of the cheese. Now sprinkle the remaining 1/2 cup of the cheese on top the vegetables. Bake for 15 minutes until done. Slice and serve hot. Enjoy!
